Banana Bread

This recipe was 100% inspired by Lori & Michelle of purelytwins and their many recipes featuring plantains. I probably make a batch of their plantain bread a couple times a month, it's a little strange sounding, but trust me. It is good. While Lori and Michelle's recipe is a savory one, the recipe I am posting today is a bit sweeter.






Banana Bread

3 ripe bananas
3 eggs
2 T coconut flour
1 t cinnamon
1 t vanilla extract
1 chai tea bag (contents)

Preheat oven to 400 degrees. Put all ingredients in a blender or food processor and blend until you have a smooth batter. Pour into any kind of pan you like and cook for 20 minutes or until the edges begin to brown and the top begins to peak and crack.




















This recipe is great for quick and easy breakfasts throughout the week and would be delicious served warm with your favorite nut butter spread over top. Enjoy!
